When you pull the Hunter Hatchet out of the tree stump, you will have your Compendium updated. Here is what the Compendium has to say about the Hunter Hatchet:

A rare Hatchet, with a long bearded axe bit that allows for greater control when planing or shaving wood. The melee weapon was found in a tree stump near Window Rock in the Grizzlies, and appears to be fairly new. This Hatchet can also be thrown.

If you’re interested in collecting every single one of the 59 weapons in Red Dead Redemption 2, you will need to collect the Hunter Hatchet. The Hunter Hatchet is just one of the many unique weapons you can get in the game including the Viking Hatchet and the Rare Shotgun.
